  1. Add frozen peas, 2 cups broth, almond milk, nutritional yeast, Dijon mustard, garlic, and black pepper to a blender or food processor and blend until completely smooth. If the mixture is too thick, add additional broth until desired consistency is reached. Season with sea salt to taste, if desired. Serve immediately. Enjoy!

Add the carrot, celery, onion, garlic, salt, and pepper to the soup. Simmer for an additional 20 minutes, or until the vegetables are tender. Remove from heat. 3. Ladle the soup into bowls and top with fresh parsley or thyme, shaved Parmesan cheese, and black pepper if desired. Serve hot.

-1 lb. dried green split peas -1 large onion, chopped -2 carrots, peeled and chopped -2 ribs celery, chopped -4 cloves garlic, minced -2 bay leaves -1 teaspoon dried thyme -8 cups vegetable broth or water -Salt and freshly ground black pepper to taste -Optional toppings: shredded cheese, crumbled bacon, diced green onions

Instructions:

1) In a large stockpot or Dutch oven, combine the green split peas, onion, carrots, celery, garlic, bay leaves, thyme and vegetable broth or water.     2) Bring to a boil over high heat. Reduce the heat to low and simmer for 1 to 2 hours, or until the peas are soft.  3) Remove and discard the bay leaves. Season with salt and pepper to taste. Serve hot with shredded cheese, crumbled bacon and diced green onions if desired.

Blend or process until the mixture becomes a smooth puree. 2. Pour the mixture into a saucepan over medium heat. Bring to a simmer and cook for 5 minutes. 3. Serve in individual bowls and enjoy!
